This past June we introduced our Make and Take Chi

This past June we introduced our Make and Take Chicken Butchery Class.
In this intimate class of 8 participants learned to take a part 2 whole chickens. Learned how to make a simple brine for your chicken and a vibrant bbq sauce.
This class is on the schedule for Oct. 3 with Chef instructor Damon.
The best part is that you learn a new skill and then take the chicken, the brine and bbq sauce home to enjoy later.

After much trial and error this dish finally came

After much trial and error this dish finally came together. These mini bao buns were a hit at a recent function.
Hand made mini bao buns were kneaded, stretched and rolled out and then steamed. The pork belly was marinated for 24 hours. Sous vided for 10 hours and finished in the oven. A quick pickle of carrot and daikon and a spicy hoisin sauce. Cilantro for garnish!

Join us in the kitchen with Chef Damon Martin for an introduction to basic chicken butchery, exploring the anatomy, techniques and expertise to making the most of your poultry with our zero waste philosophy.

In this class you will have the opportunity to engage in hands on chicken butchery and deboning as well as a live demo in bone broth, brining and sauce making fundamentals.

Each participants will leave with:
2 whole broken down chickens – vacuum sealed for you to take home
